Life really is grand, isn’t it? My life, as of recently, has been a whirlwind. I’ve done a lot of soul searching this past month, and I’m delighted with the fruits of my labor. I’ve found so many amazing things I’m loving lately. I’m focusing more on doing things everyday that bring me joy and enjoyment. There really is so much out there left to be discovered! Check out all the things, I’ve been loving lately in my everyday life!
Psst…I have a secret to admit.
I am a chronic food pinner. I pin all these drool-inducing pictures of delicious dishes I plan to make “one day”, and I’m sure you know exactly how that plays out. I never actually take the time to try any of them. Well, as part of my New Year’s Resolutions one of my goals was to try my hand at some new and exciting recipes.
So, the other day I was planning out my grocery list while skimming through my Veggy board and saw this awesome recipe for baked bell pepper tacos from Peas and Crayons that I had pinned forever ago. Unlike a lot of recipes that I pin with a zillion ingredients, I was pleasantly surprised to find that I already had most of the ingredients in my pantry. So I picked up the remaining ingredients easy enough.
And oh. my. gosh. They did not disappoint! Check out these beauties below.

Jenn made this recipe super simple and for a novice like myself it was much appreciated. They were so utterly delicious that both girls ate their weight in baked bell pepper tacos, and my husband gladly took them to work with him the next day. That’s a win in my book!
This was such an awesome recipe to try out. Thanks Jenn @ Peas and Crayons! I felt like such a rock-star in the kitchen. I am almost a tad nervous to try out another recipe because I’m over here feeling all sure of myself in the kitchen now. I’m setting myself up for immediate failure for whatever recipe I try next. haha.
I’ve been wanting to turn my slow-going hobby into a full-time job for awhile now. I also realize my limitations in this area and have a lot to learn. Because I know this, I take a lot of time to research and read about blogging, building a brand and a business.
Often times I find some bit of information and am able to easily implement it. But for most of it I’m spinning my wheels and find myself falling down rabbit holes lost and confused. It’s frustrating and for awhile now I’ve been feeling like I need some guidance.
Because of certain life changes that have happened in the past month, I now have a lot more time and energy to focus on building my blog and following my dreams. And it feels amazing! So imagine my surprise when a blogging course opened up at this exact time. A course I’ve been waiting awhile for.
Coincidence? I think not.
So that brings me to what I’m so excited about for blogging. This past week I got an email telling me that registering for the Elite Blogging Academy had opened! What’s the big deal, right? Well the big deal is that it only opens up ONCE A YEAR! The timing couldn’t be more perfect.

Seriously, after reading that my interest was piqued. So I started scouring and researching what other bloggers had to say about the course. The reviews I found were pretty awesome, and I just knew I had to be a part of this amazing training.

So I signed up and am starting on the modules now. I’ll keep you updated on how it’s going. I am so excited that I’m being led down this path. Not sure where it goes, but I’m on it never the less.
I’ve always loved reading for as long as I can remember. I used to only read fiction, with a memoir thrown in there once in awhile for fun. Maybe it’s my age but I’ve fallen head over heels in love with personal development books. Books that help stretch my mind about new and exciting things I once knew little about.
Currently, I’m reading Thrive by Arianna Huffington and it is such a fantastic book. I can’t put it down and that’s ironic since it sat on my bookshelf for almost 2 years. But just like everything else in my life right now things work out for a reason. The message in the book is exactly what I needed to hear at precisely the right time. It wouldn’t have made such an impact on me back then as it has now. And I’m grateful for the lessons being taught.
It talks about the Third Metric and how we need to reassess how we view success in our society. People are burning themselves out chasing money, power and success. Our society is demanding and tiring and this book brings up a lot of great points of how this adversely affects our lives every day.
The book is broken down into four elements of the Third Metric: Well-being, wisdom, wonder and giving. It’s full of great information, studies and quotes. It reads easy and is quite enthralling. If you’re looking for something to add to your book list this one is a must!
PRODUCTS I’M USING
I’ve recently started using Young Living Essential Oils. Initially, I wanted them to diffuse smells in my house that were free of chemicals because of my husband’s allergies. I was amazed to find out they are used for so much more than just diffusing. The uses are quite extensive and they have worked wonders for our family on so many levels.
Why do I tell you this?
So those are the things I’m loving lately. I’m feel like I’m finally doing things that I love everyday in my life, and I can’t even describe to you in words how that feels. Living a full life can be hard to come by, but I’m taking steps everyday to make this a reality.
